Vegan Cookies


Although there are a surprising about of vegan biscuits you can find in supermarkets (Sainsbury's chocolate bourbons and nice biscuits and Tesco's/Asda's ginger nuts to name a few!) I've definitely missed chocolate chip cookies since going vegan. The ones I made were probably left in longer than necessary but our flat's oven is questionable so if you don't cook them for as long they're more likely to be softer like more traditional cookies. This made 12 cookies with a tiny bit of cookie dough left over!


Ingredients:
  • 4 oz vegan butter
  • 4 oz caster sugar
  • 1 oz soya milk
  • 1/2 ts vanilla essence
  • 9 oz flour
  • 1/4 tsp salt
  • 100g dark chocolate chips (double check the ingredients to make sure they're vegan!)

1). Preheat the oven to 180°
2). In a mixing bowl, mix the butter and sugar together until it becomes creamy
3). Add the soya milk and vanilla essence and stir
4). Sift the flour and salt into the mixture and mix well
5). Add the chocolate chips
6). Place on a lined baking tray and cook for 8-10 minutes (adjust if you want them softer/crunchy)
