Vegan Banana Muffins
This is another handy recipe for using up left over ripe bananas. I used this recipe as a base, and added some dark chocolate chips and crushed peanuts to change it up a bit. This yielded 12 muffins.
Ingredients:
- 3 ripe bananas
- 60g vegan butter or oil (I used pure)
- 125g caster sugar
- 230g plain flour
- 1 TSP salt
- 1 TSP bicarbonate of soda
- 50g dark chocolate chips (double check label to make sure they don't contain milk)
- 3 TBSP chopped peanuts (this is an approximation!)
1). Preheat the oven to 180 degrees C
2). Peel and mash the bananas with a fork until pureed
3). Add the vegan butter substitute and sugar and mix well (note: it might be an idea to microwave the butter so it's easier to mix as I found it really difficult to break it up solid)
4). Sift in the flour, salt and bicarbonate of soda and stir.
5). Add the chocolate chips and chopped nuts (if using)
6). Divide the mixture between 12 cupcake cases and bake for between 10-20 minutes until golden and cooked in the middle.
