Vegan 'Cheese' Scones


I haven't had scones in such a long time I felt compelled to try and veganise some today! The addition of nooch (nutritional yeast!) definitely made it taste more realistic. 



I've written the measurements that I normally use to make enough to last me a few days, but if there's more of you in the house that like them then feel free to double the recipe! This made 9 medium scones (made using a ~5cm diameter cutter) and took around 40 minutes to make.



Ingredients:
  • 225g Self-Raising flour (or 225g plain flour + 1TSP baking powder)
  • 55g vitalite (or other dairy free butter alternative)
  • 160ml non-sweetened plant milk of choice, plus more to glaze
  • 70g violife (or other cheese alternative), grated
  • Salt
  • 1/2 TSP tumeric
  • 1/2 TSP smoked paprika
  • 1/2 TSP mustard powder
  • Dash of cayenne pepper
  • 2 TBSP nutritional yeast

1. Preheat the oven to 200°C
2. In a bowl, add the flour, spices and salt.
3. Add the butter and rub into breadcrumbs
4. Add the violife (save a small amount to put on top once the dough is done!) 
5. Stir in the plant milk and nutritional yeast until a dough is formed. Place onto a floured surface and spread out until it's at your desired thickness.




6. Place onto a lined baking tray, brush with plant milk and add a spinkle of violife if you want. 
7. Bake for 15-20 minutes until the scones are golden and crunchy on the outside.
