One Pot Mushroom Pasta
This recipe is super quick, super easy, and really warm and filling for those cold winter days. You can jazz it up by adding different veg or even vegan cheese if you fancy it. It's also great for when you don't fancy a load of washing up, as it only uses one saucepan!
Ingredients:
- ~ 7 Medium mushrooms (add more or use less to your taste!)
- Enough pasta for one person (dried)
- TSP oil
- 1/2 a medium onion
- 500ml vegetable stock
- Plant-based cream (I used oatly single cream!)
- Handful of fresh spinach
- TBSP Nutritional yeast (optional, but it adds a nice flavour!)
- Gently fry the onion and mushrooms in the oil until they have browned
- Add the vegetable stock and pasta to the saucepan. Heat, stirring occasionally, until the pasta is cooked
- Stir in the cream (around a 'glug'), the spinach and the nooch
- Serve in a pasta bowl with extra nooch if you like!
A quick tip if the pasta sauce is too runny for your liking: mix 1TSP flour with some water until a slurry is formed and add this to the saucepan. This should thicken the sauce!
