Thumbprint Cookies
These thumbprint cookies, also known as "Hallongrotta" (Swedish for 'raspberry cave' according to google) are a cute bake that will brighten up any rainy weekend.
For an egg substitute, I used 1TSP of this powder plus 2 TBSP of water. Alternatively, you could use 1TBSP Chia seeds and 3 TBSP water, or one ripe mashed banana.
This made 33 palm sized cookies, and took around an hour to make.
Ingredients
- 200g Flora (or other vegan butter substitute)
- 330g Plain Flour
- 200g Caster Sugar
- 1 TSP Vanilla essence
- 1/2TSP Baking powder
- 1/4 TSP salt
- 1 Vegan egg replacement (see above for ideas)
- Jam of your choice (I used 70g of Raspberry but the amount will change depending on how big a dip you make in the cookies)
Method
1. Preheat the oven to 160°C (Fan) or 180°C otherwise.
2. Cream the flora and sugar together, then mix in the vanilla essence.
3. Add the vegan egg substitute and combine.
4. Sieve in the flour, baking powder and salt a third at a time, stiring to combine after each.
5. Roll the dough into balls and then press the centre with your thumb to form a thumbprint (for an idea for size, mine were around 2cm in diameter after pressing. You can adjust the size how you want!)
6. Fill each dip with a small amount of jam. (NOTE: You'll most likely want less than you think as it will spread in the oven!)
7. Bake for 10-15 minutes until golden brown.
