Vegan Almond 'Parmesan'



I saw something on facebook about someone using almonds to make a parmesan-style topping for pasta and wanted to give it a go myself. This isn't overly cheesey; it's more savoury, but still adds a kick to any pasta dish!





Ingredients
  • 55g (1/2 a cup) almonds
  • 1 1/2 TBSP Nutritional yeast
  • 1/2 TSP Onion salt (you could substitute this with onion or garlic granules, but if you do you might want to add salt seperately)
  • 1/4 TSP smoked paprika


Method
1. Roast the almonds in the oven at 160°C for around 10 minutes, until they have darkened slightly. 
2. In a blender, add all of the ingredients and pulse until it becomes a fine powder
3. Enjoy! You can add this to pretty much any savoury meal to add some flavour, like you would with nutitional yeast alone.
