Vegan Marble Cupcakes



I remember making a large version of these when I was little and being facinated by how the colours didn't mix. Today I decided to give it a go in cupcake form and making the recipe vegan!



I used this egg replacement, but added 7 TBSP of water instead of the suggested 4. You could also use lemonade (see here!)  or 2 chia eggs ( 1 TBSP chia seeds  + 2.5 TBSP water for one egg) instead if you'd rather.
This made 11 medium sized cupcakes, and took around an hour from preparing the ingredients to the cakes being done.


Ingredients

  • 125g Flora (or other vegan butter)
  • 125g caster sugar
  • 125g self raising flour
  • 2 TBSP of vegan egg replacement (or other substitute equivalent to 2 whole eggs)
  • 7 TBSP water
  • 1 TSP vanilla extract
  • 1 TBSP cocoa powder


Method

1. Preheat the oven to 180°C

2. In a large bowl, mix the flora and sugar together until creamy.


3. Add the egg replacement and water, and mix until combined.

4. Sift the flour and combine into the mixture

5. Put half of the mixture in a seperate bowl. In one bowl, add the vanilla extract and mix. In the other, do the same with the cocoa powder.

6. In the cupcake cases, put small blobs of each mixture and then swirl with a fork. Make sure not to mix too much or you'll lose the marble effect.

7. Bake for 8-12 minutes until a knife placed in the middle of the cupcake comes out clean.

8. Enjoy! I added cocoa icing and bournville buttons to mine once they were cool, but they're just as nice plain :)
