Comforting Veggie Pasta
Pasta is a staple in our household, as I'm sure it is in the majority of households in the UK, but I wanted to try something a bit different to our usual white pasta and red sauce.
The beauty of this is that you can use whatever veggies you have in the fridge and your favourite vegan cheese and it'll be a fab meal!
This took around 30 minutes to make, and made one serving.
Ingredients
- 2oz wholemeal pasta
- Handful of grated vegan cheese (I used applewood which added a lovely smokey flavour but choose your favourite dairy free cheese!)
- 2 TSP vegan cream cheese (I used violife creamy)
- 1 medium carrot
- 3 large mushrooms
- 2 vegan sausages
- 2 spring onions (or half a regular onion)
- 1 TSP black pepper
- 1 TSP vegetable oil
- 1/2 TSP paprika
Method
1. Cook the vegan sausages as per the instructions, and set aside once done.
2. Cook the pasta according to the packet instructions, but make sure to reserve the pasta water for later!
3. In a frying pan, add the oil and black pepper and fry on a medium heat for around 1 minute so the flavour is added to the oil.
4. Add the spring onion and fry for a further couple of minutes until it just starts to brown a little - be careful not to burn them as they burn very easily!
5. Add the chopped mushrooms and chopped carrot and fry until the carrots soften.
6. Cut up the vegan sausages and add to the pan.
7. To the pan, add the vegan cream cheese and cooked pasta, and stir.
8. Slowly and gradually add some of the pasta water until a thin sauce forms.
9. Add the paprika and vegan cheese, and stir until the cheese has melted to make a thicker sauce.
10. Serve, ideally with lots of nooch! ☺
