Forest fruit flapjacks
Happy Saturday! This weekend's baking endeavour involved trying to find a recipe that uses ingredients I actually have in the cupboard - and flapjacks fit the bill! This is a pretty simple recipe with just 5 main ingredients - though if you don't have berries you can leave them out for plain flapjacks, or add your own extras!
I like these because they remind me of the ones my school used to sell at lunchtimes, so they're a bit nostalgic! Also, they don't require flour which is great at the moment due to the shortage.
I also want to add my weighing scales aren't working at the moment, so I had to use cups and convert them to grams, so bear that in mind!
This took around an hour to make, and made 12 medium flapjacks.
Ingredients
- 370g oats
- 175g flora, or another vegan dairy free butter alternative
- 4 TBSP golden syrup
- 100g brown sugar
- 400g mixed berries (I used frozen raspberries, strawberries and cherries!)
Method
- Preheat the oven to 190°C.
- In a saucepan, add the berries and cook on a low heat until a fruit syrup forms (you may need to mash any large pieces of fruit up once they've softened!)
- In a seperate pan, add the sugar, flora and golden syrup. Heat on a low heat until the butter has melted and the mixture has combined.
- Add the butter/sugar mixture to the oats, and combine until the oats are coated.
- In a greased (or lined) baking tray, spread half of the oats so they cover the bottom of the tray.
- Add the fruit syrup as the next layer.
- Finally, top with the remaining oat mixture.
- Bake for 20-25 minutes (the longer you bake them for the more likely they'll hold together better, but don't burn them!) until the top layer looks brown and crisp.
