New VEGAN cake mixes!
While many mainstream cake box mixes have been 'vegan' for a while (see my post here about how to make them vegan!), there is definitely a lack of explicitly vegan ones on the market. However, BOSH have recently released their own range of vegan cake mixes!
There's 3 different ones: lemon drizzle cakes, a chocolate fudge cake and a brownie mix! The first two are currently on offer in Waitrose for £2.79 (will be £3.49 after the offer ends) and this brownie mix was £1.99 (usually 2.49). I decided to try the brownie one for myself to see how it compares to homemade brownies!
The kit is pretty simple and comes with the flour/chocolate/brownie powder mix and some vegan chocolate chips (though it's interesting that the image they use on the box is actually a PB&J brownie from their own recipe book and is nothing to do with what's inside...). You simply add oil (though I used melted flora as I didn't have any vegetable oil!) and water and whisk until smooth. Then, pour into a baking tray, top with the chocolate chips and bake for 15-20 minutes for gooey chocolately brownies.
The verdict? They're pretty great!
I think that there's no doubt that they don't quite match up to a good old homemade brownie but they're pretty damn close! No artificial taste, a really good consistency and they're quite addictive. My non-vegan partner absolutely loved them too which is a bonus!
Overall, these are really good for a quick treat, and also for maybe for people with vegan friends who don't know quite what to cook for them! I'm really glad to see accessible vegan food like this, and I'm hoping for more in the future 😊
