Vegan triple chocolate chip cookies




One recipe I've found it hard to get right since being vegan is cookies. I found it hard to get them chewy and soft and usually ended up with crunchier biscuit-like bakes. The only one I've found that works is the chocolate chip cookie one by Bosh, but I wanted to experiment with it and take it further so here is a recipe for: triple chocolate chip cookies!


They're soft, melt in your mouth AND vegan! They've been tried and tested on my omni boyfriend who also loves them so they're great for vegans and non-vegans alike. No weird ingredients, just tasty cookies.
For clarity, I based this off the original Bosh recipe, but changed proportions and added ingredients so it's inspired by that recipe.
This recipe made around 20 small cookies, and took around 30 minutes to make.


Ingredients
  • 150g plain flour
  • 120g vegan butter 
  • 120g granulated sugar
  • 2 TBSP cocoa powder
  • 25g vegan dark chocolate
  • 25g vegan milk chocolate (I used nomo!)
  • Pinch of salt

Method
  1. Preheat the oven to 180°C.
  2. In a large bowl, mix the butter and sugar together until creamy.
  3. Add the cocoa powder and salt and mix until combined.
  4. Add the flour a little bit at a time, combining the flour into the mixture each time before adding more, until you're left with a cookie dough.
  5. Chop the chocolate into small chunks and stir into the dough.
  6. Roll the dough into small balls around 2cm in diamter and then gently flatten with the palm of your hand. Place on a baking tray lined with baking parchement and bake for 7-10 minutes. Make sure not to overdo them or they won't be soft! The best way to tell is that they'll still be soft when you take them out, but the tops will have cracked a little.
