Vegan "Smarties" Cookies
What's better than soft, chewy cookies? How about cookies with VEGAN DARK CHOCOLATE SMARTIES! These use the Doisy and Dam dark chocolate drops which are decadent dark chocolate circles covered in a crisp sugary shell.
These ended up being the perfect mixture of nostalgic but also a fun twist with the dark chocolate. You could try subbing out 2 tbsp of flour for 2 tbsp of cocoa powder if you want even more chocolate!
This made 8 large cookies, and took around 30 minutes to make.
Ingredients
- 120g caster sugar
- 120g vegan butter (I used vitalite)
- 150g plain flour
- Pinch of salt
- 1 tsp vanilla extract
- 2 x 30g packets Doisy and Dam dark chocolate drops
Method
- Preheat the oven to 180°C
- In a large bowl, add the vegan butter and sugar and cream together
- Add the vanilla extract and mix
- Add the flour and stir until a dough forms
- Add most of the chocolate, leaving a few spare to decorate the tops before they go in the oven
- Make equal size balls of dough, place spaced out on a lined baking tray and press a little to form cookies
- Bake for 10-15 minutes until golden and the edges have crisped
